These deliciously light muffins are one of my 12-year old daughter's favorites for breakfast. And they couldn't be easier!




CINNAMON MUFFINS




1-1/2 cups flour


1/2 cup sugar


1/2 teaspoon salt


1/2 teaspoon cinnamon


1/2 cup milk


1/4 cup brown sugar


2 teaspooons baking powder


1 egg, beaten


1/2 cup cooking oil




Stir together flour, both sugars, salt, baking powder and cinnamon. Combine egg, oil and milk; add to dry ingredients just until moistened. Fill greased muffin cups (or paper liners) 2/3 full. Sprinkle tops with sugar, if desired. Bake at 400 degrees for about 20 minutes, till golden. Makes 12 muffins.
